How the math works
Roasting time = weight in pounds x 14 minutes unstuffed, or 17 minutes stuffed, at 325 F. At 350 F it runs about 10 percent faster. Fridge thawing takes about 24 hours per 4 lb, and cold water thawing about 30 minutes per pound. Serving size is 1.25 lb per person.

- About 3 hours 15 minutes unstuffed at 325 F, and closer to 4 hours if stuffed. Start checking the temperature 45 minutes before the estimate, because ovens and birds both vary.
- What temperature is a turkey done at?
- 165 F in the thickest part of the thigh, not touching bone. Many cooks pull the bird at 160 F and let carryover heat finish it during the rest, which keeps the breast noticeably juicier.
- How long does a turkey take to thaw?
- Roughly a day for every 4 lb in the fridge, so a 16 lb bird needs four full days. Cold water thawing takes about 30 minutes a pound and needs the water changed every half hour.
